Ingredients:
Tilapia filets
1 -2 bags Shermans Tennessee Hot Crackers, fiesta - crushed finely
1 package- Flour tortillas
Cabbage- red and green
1 cup Mayonnaise
1 Green onion/ ½ red onion
Handful of Cilantro
½ cup Lime juice
Pico de gayo
1 Avocado
Spray olive oil
2 tablespoons tajin
Directions:
Cook the tilapia
Mix 1 cup mayo, ⅓ cup lime juice, and 1 tbs Tajin seasoning in a bowl
Dip & coat tilapia filet in the mixture
Coat with finely crushed fiesta crackers
Spray air fryer with oil
Lay tilapia in a single layer in air fryer
Cook at 350 for 10 minutes
Make the slaw
Finely chop red and white cabbage or use pre-chopped cabbage mix
Add 1 cup mayo, ⅓ cup lime juice, 2 tbs Tajin, chopped green onion, and cilantro and mix well, add salt and pepper to taste. Set aside a small amount of the mayo mixture to use as sauce for the taco later.
Put in the refrigerator to chill.
Putting it all together
Grab a flour tortilla
Slice the fried tilapia filet into strips and place on tortilla
Add a large spoonful of slaw
Top with sliced avocado and pico de gayo and extra slaw sauce
